Healthy, six-ingredient cookie recipe!

So I MUST share that I love baking with bananas & oats. Bananas are a personal favorite because they provide their own sweetness. And oats… well, oats function as a flour, but they’re whole grain, can be gluten free (provided you buy them that way), and they have a good amount of fiber and provide other awesome nutrients like protein & iron. Moral of the story: bake with oats and bananas more often, and life will be good ?.

Here’s a new healthy and easy cookie recipe I have for ya involving oats, bananas, cocoa powder, coconut oil & peanut butter:

  • 3 ripe bananas
  • 2 c rolled oats (I use Trader Joe’s gluten free)
  • 1/4 c creamy all-natural peanut butter
  • 1/4 c cocoa (or cacao) powder
  • 1/3 c coconut oil, softened
  • 1 tsp vanilla extract

Mash bananas then add remainder of ingredients. Pre-heat oven to 350* while you let batter sit for approximately 20 min. Spoon balls of batter onto UNgreased cookie sheet. Bake for 12 minutes. Let cool then feel free to eat as many as you want because they’re guilt-free ??
